Chicken Sate with Spicy Peanut Dipping Sauce
The original recipe comes from The America's Test Kitchen Family Cookbook (circa 2006). I inherited this cookbook from my Dad's collection and it was what inspired me to deep deeper into the ATK recipes. I don't think this recipe (original or my edited version) exists on their site anymore but as those of you who glance at my recipes know, I am a big believer in their techniques. We have shared the peanut sauce previously but the chicken sate is a serious crowd pleaser. I have served it at elegant dinner parties and while camping with friends. Make as an appetizer or a meal.
Ingredients
- 4-6 chicken breasts (about 1 1/2 to 2 lbs)
- 1/4 cup soy sauce
- 1/4 cup vegetable oil
- 1/4 cup dark brown sugar
- 1/4 cup cilantro minced
- 3 tbsp ketchup
- 2 cloves garlic minced
- 1 tsp tabasco sauce
- 4 scallions sliced thin
- 1 1/2 cups spicy peanut sauce (recipe to follow)
Spicy Peanut Sauce
- 1/2 to 3/4 cup peanut butter (depending on YOUR liking)
- 3 tbsp fresh lime juice
- 2 tbsp ketchup
- 2 tbsp soy sauce
- 1 tbsp dark brown sugar
- 1 tbsp cilantro minced
- 2 scallions sliced thin
- 1/2 tsp chili garlic sauce (to taste)
- 1 clove garlic minced
- 2-4 tbsp hot water (add last to adjust thickness)
Instructions
- Slice chicken diagonal into 1/4 inch thick strips. Combine marinade ingredients and pour over chicken. Refrigerate for a minimum of 30 min but not longer than 2 hours.Adjust oven rack to 6 inches from broiler and heat the broiler. Line broiler plan with foil and cover with slotted broiler pan. Weave chicken onto pre-soaked bamboo or metal skewers and cover ends with foil to prevent burning. Broil until cooked, about 8 min flipping halfway through. Alternatively, grill about same time (grill is my preference). If I am not going for looks, I skip the skewering step and just grill on a medium high grill for about 3-4 minutes per side. The grill will be a mess so line with grill mats or heavy duty foil before cooking.For sauce, whisk together sauce ingredients. Use hot water to thin sauce to desired consistency.Happy Eating!!
