Sarah Kieffer’s Brown Butter Brownie Cookie
This recipe is from fellow Minneapolitan and culinary wizard Sarah Kieffer, and can be found on her vanillabeanblog. They’re so otherworldly good, I recommend eating them alone because if you’re like me, stuff gets real weird, real fast when these are on the menu. The only addition I made was chopping up half a dark chocolate bar and throwing it in at the end, because why not? And you know who else loves these cookies? SANTA. Look at that portly old goof, getting ready to tuck in!
Ingredients
- 1 cup bittersweet or semi sweet chocolate chips
- 2 tbsp warm water
- 1.5 tsp pure vanilla extract
- 1 stick unsalted butter
- 2 large eggs, room temperature
- 3/4 cup sugar
- 1/2 cup brown sugar
- 1 cup flour (I used cup4cup gluten free flour)
- 2 tbsp unsweetened cocoa powder
- 1 tsp instant espresso powder (I used decaf)
- 1 tsp baking powder
- 1/2 tsp kosher salt
- flakey sea salt for sprinkling at the end
Instructions
- Preheat oven to 350°
- Put chocolate chips, warm water, and vanilla in heat proof bowl. Set aside.In a sauce pan, melt butter on medium heat-keep cooking and stirring often, until butter is foamy and becomes dark and fragrant (3-4 minutes). Slowly pour the hot butter over the chocolate chips, be careful! Whisk until the chocolate is melted and smooth.
- Add eggs, white sugar and brown sugar to the bowl of a stand mixer and whip on high speed for 6 minutes (or use a handheld mixer with a large bowl). While the sugars are mixing, sift the flour, cocoa powder, baking powder, espresso powder and salt in a medium bowl. Add this mixture to the sugar mixture.Reduce speed of the mixer to low, and slowly pour the melted chocolate mixture into the eggs. Mix 1 minute just to combine.
- Once dough has come together stop mixer. On a parchment lined cookie sheet drop 1 inch balls on the parchment and sprinkle with a pinch of flakey sea salt and bake 9-11 minutes. NOTE: I sprinkled mine with sea salt after they came out of the oven and while the cookies were still hot.HAPPY EATING!!
