Sloppy Joes
A comfort food staple. This recipe has been adapted over the years from the "Not So Sloppy Joe" recipe from The New Basics Cookbook by Rosso and Lukens. I have changed up some of the quantities to fit my family's taste. I serve with good old store bought tater tots loaded with cheese, crumbled cooked bacon and green onions. Add a green salad and you are in business.
Ingredients
- 2 tbsp olive oil
- 1 1/2 cups onions chopped (or combine 1 cup of chopped onions and 1/2 cup green peppers)
- 1 celery rib chopped
- 2 cloves garlic minced
- 1/2 tsp dried oregano
- 1 lb ground beef
- 1 cup ketchup
- 3/4 cup tomato sauce
- 2 tbsp tomato paste
- 2 tbsp red wine vinegar
- 1 tbsp Worcestershire sauce
- 1 tbsp brown sugar
- 1 tsp salt
- 1 1/2 tsp cajun or creole seasoning ( I prefer Tony Charchere's)
- pepper to taste
- 1/4 tsp tabasco sauce
- 4 poppy seed rolls
- American Cheese
Instructions
- Sauté vegetables in olive oil until transparent, about 8-10 minutes. Add garlic and oregano and sauté until fragrant. Add beef and brown, drain excess oil. Add remaining ingredients. Bring to a boil then reduce to a simmer until flavors meld, about an hour.Alternatively, I prefer to add sautéed vegetables, browned beef and remaining ingredients to a crock pot. Cook on high until simmering then reduce to low and cook about 4 hours.Adjust seasoning as desired.Serve on toasted rolls with American cheese.Happy Eating!!
