Chicken Tortellini Soup
This soup was created out of desperation. I had chicken thawed and ready to cook but nothing else to stand along side it.I was looking through The House of O'Brien website for inspiration and saw our Italian Sausage Tortellini Soup. I decided to make a switch/ I switched the sausage for chicken, the red wine for white wine, beef broth for chicken broth, and parsley for basil.
Ingredients
- 3 skinless chicken breast
- 1 cup chopped onion
- 2 cloves garlic minced
- 5 cups chicken broth
- 1/2 cup water
- 1/2 cup white wine
- 1 cup thinly sliced carrots
- 1/2 tbsp basil chopped
- 1/2 tsp dried oregano
- 8 ounce tortellinin pasta
- 1 tbsp salt
- 1/2 tbsp pepper
Instructions
Roasting Chicken
- Preheat oven to 350° Rinse chicken and pat dry.
- Place chicken on a cookie sheet lined with aluminum foil. Drizzle olive oil over the top of the chicken and sprinkle with salt and pepper. Place in the oven for 35 minutes.
- Take out and set aside
Preparing Soup
- Heat olive oil in pot on medium high heat first put in carrots and sauté, then add onions & garlic. Add chicken broth, water, and wine. Add in the tortellini and simmer. Add in basil, oregano and salt and pepper.
- Once the chicken is slightly cooled either shred or cut the chicken into cubes and put in the soup pot. Stir and turn heat to low and let the soup simmer for 30 minutes.HAPPY EATING!!
