Debbie’s Broccoli & Romaine Salad
I got this recipe from my dear friend's sister Debbie. I think it's "out there" in the recipe world but I can't exactly know where it originated as the exact distribution of ingredients is a bit different than those I found posted. It is sweet and crunchy with a little veggie punch.
Ingredients
- 1 bunch (about 1/2 cups) broccoli florets cut into small pieces
- 1 head romaine
- 4 green onions
- 1 cup pecan pieces (broken optional)
- 1 package ramen noodles crushed
- 2 tbsp butter
- 1/4 cup red wine vinegar
- 6 tbsp vegetable oil
- 1-3 tbsp sugar (to taste)
- 1 tbsp soy sauce
Instructions
- Blanch broccoli pieces in boiling water for about 3 minutes, submerge in cold water bath, drain on paper towels.Combine dressing ingredients and shake in a glass jar.Sauté pecans and ramen noodles in butter, drain on paper towels and let cool.Toss together chopped broccoli, romaine and sliced green onions.Top with pecan noodle mixture, drizzle with dressing.Serve immediately.
