Zoë’s Brownies
Zoë François is a renowned pastry Chef and a celebrity with her cooking show on the Magnolia Channel called "Zoë Bakes". I've been a fan of hers for a very long time collecting all he cookbooks and taking a baking class of hers, I can say she is ALL that and a bag of chips!! I adore her and I've learned more from her on the baking side of the Culinary world then any other pastry Chef.These brownies pack a wild punch of chocolate and you can add anything to them. I added white chocolate on the top of the recipe I'm sharing with you here, but you can add a swirl of peanut butter, dark chocolate literally whatever you can think of you can add.
Ingredients
- 2 1/3 cups cake flour
- 1/2 cup cocoa powder
- 1/2 tsp kosher salt
- 2 cups unsalted butter
- 3/4 lb bittersweet chocolate, chopped
- 7 room temperature eggs
- 3 cups sugar
- 2 tsp vanilla
Instructions
- Pre-heat the oven to 350°Butter and line a 9×13 pan buttered parchment Whisk together the flour, cocoa powder and salt. Set asideIn a medium saucepan over medium-low heat, melt the butter to just a simmer. Turn off heat and add the chopped chocolate. Swirl the pan so the chocolate is submerged in the butter and let sit for 3 minutes. Gently whisk until smooth.In a bowl of a stand mixer, fitted with the paddle attachment, whip together the eggs, sugar, and vanilla on high speed until light and fluffy, about 5 minutes. Turn the speed to low and slowly add the melted chocolate mixture.Add the flour mixture to the chocolate mixture and STIR to combine. Don't over mixPour into prepared pan and add toppings, if desiredBake for for about 35-40 minutes or until a tester comes out with moist crumbs. It can take much longer depending on your oven and ingredient temperature. I you like your brownies dense and gooey, bake them until the sides puff, but the center is still fudgy when tested.HAPPY BAKING!!
