Grandpa Ralphie’s grilled Chicken

Recipe of the Day (#ROTD)

My Mother’s Father, Grandpa Ralphie, was a quiet, kind, smart and thoughtful man. He ran the family business, could build anything, and had the most beautiful meticulous garden. Long before eating “raw” was in vogue my Grandpa Ralphie would slice up vegetables from his garden, toss a salad and make this grilled chicken for most summer dinners at his home. A simple dinner but so full of flavor and so healthy. This chicken can be marinated for an hour or over night. The lemon juice breaks down the meat and the olive oil makes the meat tender, while the teriyaki sauce gives the chicken a slight sweet taste and helps to caramelize the outside of the meat. I hope you like this recipe as much as my family has over the years.

  • 4 Chicken Breasts~rinsed, dried and placed in a large plastic bag
  • 1/4 Cup of Olive Oil
  • 1/4 Cup of Teriyaki sauce
  • 2 Lemons (juiced)
  • Salt/Pepper

Placed all ingredients in a large plastic bag and place the bag in the refrigerator for 1 hour or up to over night. To grill it~set grill to 400°~place chicken straight from the plastic bag onto the grill~Grill each side 5-6 minutes per side. If the juices run clear after the second side is done the chicken is ready if not flip the chicken breast again and grill for 1-2 more minutes on each side. Place chicken on a platter and tent the platter with tin foil over the chicken and let it sit for 10 minutes so the juices can redistribute back into the chicken.
