Grilled Zucchini Salad by Kendall Oberto

From our friends at Food Network, this is a simple and fresh way to use the beautiful garden zucchini that my master gardener neighbor is so generous to share with me. It is the epitome of summer vegetable goodness.

Ingredients
  

  • 3-4 zucchini cut in thin strips lengthwise
  • 1 tbsp dijon mustard
  • 1/4 cup lemon juice
  • 1 tsp grated lemon zest
  • 2 tbsp parsley finely chopped
  • 1/2 cup olive oil
  • 2 tbsp pine nuts toasted
  • mint leaf
  • salt
  • pepper

Instructions
 

  • Heat the grill to high heat. Brush the zucchini on both sides with oil and season with salt and pepper. Grill for just about 1 minute per side (until slightly charred and wilted). Remove to a platter.
    Whisk together the mustard, lemon juice, zest, salt and pepper and parsley. Slowly whisk in olive oil until emulsified. Drizzle vinaigrette over the zucchini and let marinate 15 min at room temperature. Top with shaved cheese, pine nuts, parsley and mint leaves.
