Alan’s Spinach Salad by Kendall Oberto

This salad recipe comes from a great friend who I worked with at Hewlett-Packard back in the 90s. He was one of the funniest men I have ever met and we actually had a birthday party for him where we made T-shirts with all of his iconic saying on them. This was his signature potluck dish and I have been making it ever since.

Ingredients
  

Salad

  • 1 bag baby spinach
  • 1 head romaine lettuce torn
  • 1 small purple onion thinly sliced
  • 8 oz button mushrooms sliced
  • 1 small can mandarin oranges, drained
  • 12 oz cheese shredded
  • 3/4 lb bacon, cooked, crumbled
  • 1/2 cup slivered almonds
  • 1 tbsp sugar

Dressing

  • 1 tbsp poppy seeds
  • 1/3 cup white vinegar
  • 3/4 cup oil
  • 1/3 cup sugar
  • 1/4 cup grated red onion
  • 3/4 tsp salt
  • 1 tbsp dried mustard

Instructions
 

  • Camelize almonds by tossing with 1T sugar and cook in a dry skillet on low heat until brown.
    Combine dressing ingredients and shake until combined.
    Toss dressing and salad together just before serving.
