Recipe of the Day (#ROTD)
Zoodles are zucchini that have been spiraled, you can do this at home with a spiral tool or most grocery stores have it pre-made in the produce section. This salad is so simple and so good you can pair it with just about any meal. This (semi) homemade ranch dressing is so easy and it keeps for about 2 weeks in the refrigerator and is far superior than the bottled ranch dressings.
Salad:
- 1 head of romaine lettuce
- 1 1/2 cups of zoodles
- sunflower seeds
- salt
- pepper
Clean lettuce and rough chop it into a large bowl. Place zoodles in the same bowl and sprinkle in the sunflower seeds. Sprinkle salt and pepper on the lettuce and zoodles then drizzle ranch dressing on top. Toss.
Ranch Dressing:
- 1 package of Hidden Valley ranch dressing (buttermilk)
- 1/2 cup Hellmann’s mayonnaise
- 1/2 cup Kraft real mayonnaise
- 1 cup of buttermilk
Place all ingredients in a bowl (that has a lid for storage in the refrigerator) and whisk, add salt and pepper.
