Potluck German Apple Cake

INGREDIENTS
Cake:
3 large eggs, room temperature
1 1/2 cups sugar
1/2 cup vegetable oil
1/2 cup applesauce
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
4 1/2 cups chopped peeled tart apples (I use Granny Smith)
1 cup toasted and chopped pecans
Frosting:
1 package (8 ounces) cream cheese, softened
2 teaspoons butter, softened
2 cups confectioners’ sugar
1 teaspoon vanilla
DESCRIPTION
This recipe came from the Taste of Home website. I have made some adjustments based on the feedback on the site and my personal preferences. As my husband so aptly noted, it’s fall in a cake!
DIRECTIONS
In a large bowl, beat the eggs, sugar, oil and vanilla. Combine the flour, cinnamon, baking soda and salt; add to egg mixture and mix well. Fold in apples and nuts. Pour into a greased 13×9-in. baking dish fitted with a parchment paper sling. Bake at 350° until a toothpick inserted in the center comes out clean, 50-60 minutes. Cool on a wire rack.
In a small bowl, beat cream cheese, butter and vanilla . Add confectioners’ sugar 1/2 cup at a time, beating until smooth. Spread over cake. Refrigerate leftovers.
I topped the cake with a tiny sprinkle of cinnamon sugar and a candied pecan, just for looks.
NOTES
Whenever I make cakes, bars or any other dessert in a rectangular baking dish, I always line it with a parchment paper sling. It makes lifting out of the pan a breeze and cleanup so much easier.
Cut a piece of parchment paper to fit the width of your pan and extend about 1-2 inches over the sides of the pan. These edges will become your handles after your baked good cools.
Cut a 2nd piece of parchment to run along the other side of the pan, again leaving about 1-2 inches of overhang.
If your recipe calls for a greased dish, grease the parchment. You can also use a little cooking spray under and between the layers to help it lay flat in the dish.
Pour your batter in slowly and bake, following your recipe. Let cool after baking.
After your baked good has fully cooled, use the overhanging parchment to gently lift the brownies, bread or cake out of the pan to slice.
