Apple Puffed Pancake

This recipe is inspired by one like it at the iconic Walker Brothers pancake house restaurants in suburban Chicago. Weekend outings to Walker Brothers were an absolute treat but long lines and then small entertaining budgets forced us to search and develop a method for making this at home. This baked treat is extremely easy to make and makes for a showy presentation.

Equipment

  • Apple Slicer *Link at the bottom

Ingredients
  

  • 6 eggs
  • 1 1/2 cup milk
  • 1 cup flour
  • 3 tbsp granulated sugar
  • 1 1/2 tsp vanilla
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 cup butter
  • 3 Granny Smith Apples thinly sliced
  • 1/2 cup brown sugar

Instructions
 

  • Preheat oven to 425°.
    In blender mix eggs, milk, flour, sugar, vanilla, salt and cinnamon until blended.
    In oven, melt butter in 13 x 9 baking dish; add apple slices and brown sugar and stir to coat the apples. Return the dish to oven until apples soften and sugar begins to caramelize, about 10 minutes checking frequently to ensure the butter doesn't burn.
    Do a final couple pulses to the batter in the blender and immediately pour batter over apple mixture. Bake in middle of oven 20 minutes or until puffed and brown.
    Serve immediately.
