Aunt Opal’s Banana Pudding Recipe

Joanna Gaines has me in her vortex. I love her show, cookbooks, and all of the recipes I've made from those cookbooks. Every recipe is clear and turns out fab every time. This dessert I made recently for a "Gal-Gathering" I had for a friend who was in town visiting. Instead of making this in a large trifle bowl I made individual servings of pudding in small low-ball glasses. It looked cute and was a perfect serving size for everyone. Try it for your next dinner party or cocktail party, you can make it ahead of time and keep it in the refrigerator.

Ingredients
  

  • 1 8 ounce block of cream cheese, at ROOM TEMPERATURE
  • 1 14 ounce can sweetened condensed milk
  • 1 cup whole milk
  • 1 3.4 ounce package of instant vanilla pudding
  • 6 cups Homemade whipped cream, how to make it below
  • 1 11 ounce box vanilla wafers
  • 3 banana's, sliced, or as needed

Instructions
 

  • In an electric mixer with the whisk attachment, beat the cream cheese until smooth. Do not skip this step.
    Add the condensed milk, whole milk, and pudding mix. Beat on high speed for about 2 minutes, until very well blended. Add half of the whipped cream and beat just until combined.
    To assemble (as I did for my cocktail party with low-ball glasses) cover the bottom of the glass with vanilla wafers, they may overlap. Spoon some of the pudding mixture on top of the wafers. The next layer is the slice banana. Add another layer of pudding and then more sliced banana's. Top that with whipped cream. Get creative and make the layers your own however, you want them arranged this is how I did it.
    Cover each glass with plastic wrap and refrigerate. Can be refrigerated for 2 hours or 1 day ahead.

Whipped Cream

  • 1 pint heavy whipping cream
    1/4 cup sugar
    1 tsp. vanilla
    In a large bowl, combine cream, sugar, and vanilla. Beat with an electric mixture or a stand mixture with the whisk attachment until fluffy and the cream holds stiff peaks.
