Barbara Bush’s Quiche Recipe

This recipe by Barbara Bush is one of my brunch favorites. I have modified it slightly to make it a little richer with heavy cream and the addition of cheese but these are obviously optional.

Ingredients
  

  • 3 tbsp unsalted butter
  • 1 1/4 pounds mushrooms slice (I like to use a combination of cremini and shiitake but any mushroom will do)
  • 3 green onions
  • 1 clove garlic
  • 3 shallots minced
  • 1 3/4 tsp oregano
  • 1 3/4 tsp basil
  • 1 1/4 tsp salt
  • 3/4 tsp marjoram
  • 1/4 tsp black pepper
  • 1/4 tsp thyme
  • 1/2 tsp dry mustard
  • 4 eggs
  • 3/4 cup milk or heavy cream
  • 1 1/2 cup grated cheese of your choice (Gruyère, Fontina, Gouda)
  • 1 9-inch pie crust

Instructions
 

  • Position rack in lower 1/3 of oven and preheat to 375° degrees.
    Melt butter in large skillet over med-hi heat. Saute mushrooms, onions, garlic and shallots together. Stir in seasonings and cook 2 minutes until liquid is evaporated. Let cool 5 minutes.
    In a med bowl, combine eggs with milk or cream and beat well. Stir in mushroom mixture and cheese and pour into pie crust. Bake until filling is puffed, set and starting to brown about 35-45 minutes.
