BBQ Chicken with Garlic Rice

Recipe of the Day (#ROTD)

These two recipes are show stoppers and can be served on Tuesday/Thursday but also can be used on any special occasion. They both are easy and so good you will be shocked.

Ingredients for BBQ Chicken:

  • Chicken breast pounded down to about 1/2 thick (adjust recipe to as many as you are serving I used two breasts)
  • Olive oil
  • Butter-about a half a stick
  • Any bottled BBQ sauce you prefer (I use Sweet Baby Rays)
  • Honey
  • Salt
  • Pepper

Pre heat oven to 350° (I use the convection mode on my oven but it is not necessary). Pound down the chicken by placing the chicken in between two pieces of parchment paper and with a meat mallet pound down the meat until it is the thickness you desire. Place Chicken on a cookie sheet lined with aluminum foil. Drizzle Olive oil over the chicken followed by a drizzle of honey (this step is up to you how little or how much you desire). Salt and pepper to your liking then pour the BBQ sauce over the chicken (as much or as little as you like). Finally, dot the top of each piece of chicken with pats of butter. Again, as little or as much you desire. Place in the oven for 35- 40 minutes.

Ingredients for the Garlic Rice :

  • Long grain rice
  • 3 garlic cloves pressed through a garlic press
  • 1 block of chicken bouillon
  • Butter- half of a stick
  • water

In a medium sauce pan over high heat add butter and melt it completely. Add rice (I usually make 4 servings so that equals 1 cup of rice). Have your garlic, bouillon and measured out water ready to go because the next steps go fast. Turn the heat down to medium and brown the rice just as it starts to turn a little brown put the bouillon and garlic into the pan. Stir continuously and when the rice gets just a little bit more brown pour in water. Stir the mixture and place the lid on the pot and let it boil for 2 minutes then turn down the temperature of stove and let it simmer for another 15-20 minutes ( I usually turn off the stove keep the lid of the pot on and let it cook until the chicken is done).

I serve extra BBQ sauce in small ramekin bowls for everyone to dip their chicken in or extra sauce for their rice.
