Blondies
This recipe from Gordon Ramsey is a good different kind of brownie. First it is a blondie which means it is more caramel and brown sugary. Second, it has white chocolate chips and dried cranberries in it which kicks up the flavor and texture. It isn't your everyday dessert but it is a delightful treat.
Ingredients
- 1 cup (2sticks of butter), plus extra for greasing the pan
- 1 3/4 cup dark brown sugar
- pinch of sea salt
- 1 tsp vanilla
- 2 eggs lightly beaten
- 21/4 cups flour
- 1/2 tsp baking soda
- 1 tsp baking powder
- 8 ounces white chocolate, chopped into small chunks
- 1/4 cup dried cranberries
Instructions
- Preheat oven to 350°. Lightly butter a 9-inch square cake pan and line with wax paper, allowing the wax paper to come up the sides with a 1-inch overhang.
- Melt the butter in a saucepan and whisk in the brown sugar and salt. Add the vanilla and whisk again. Remove from the heat and cool.
- Add the eggs to the butter mixture and stir well. Sift the flour, baking soda, and baking powder into a bowl, then whisk the egg and butter mixture a little at a time.
- Fold in the white chocolate and cranberries.
- Spoon into prepared pan and spread out evenly. Bake for 35-40 minutes until the outer edges are firm and the middle is still soft.
- Leave to cool for at least 10 minutes. Once cooled the Blondies will keep in an airtight container for a week.Happy Eating!!
