Recipe of the Day (#ROTD)
Candy Cane Cookies
These Cookies are nostalgic and slightly different from other Christmas cookies. The dough has peppermint extract in it giving them the taste of Christmas in every bit.
Ingredients
- 1 cup sugar
- 1 cup butter
- 1/2 cup milk
- 1 tsp vanilla
- 1 tsp peppermint extract
- 1 egg
- 3 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp red food coloring
- 2 tbsp finely crushed hard peppermint candies
- 2 tbsp sugar
- 2 tbsp red sprinkles
Instructions
- Preheat oven to 375°
- Beat 1 cup of sugar, the butter, milk, vanilla, peppermint extract and egg in a large bowl with an electric mixer. Stir in the flour, baking powder and salt. Divide dough in half. Stir food coloring into one half of the dough. Cover both regular dough and colored dough and chill for 4 hours or over night.
- For each candy cane, shape 1 rounded teaspoon of dough from each half into 4-inch ropes by rolling back and forth. Place 1 red and 1 regular dough rope side by side; press together lightly and then twist. Place on uncreased cookie sheet and bend ropes into the candy cane shape.
- Bake 9-12 minutes
- Mix the crushed candy canes and sugar together (or just use red sprinkles) and dust either one of those mixtures on top of the formed candy canes liberally. Cool completely.Happy Eating!!
