Cantaloupe Carpaccio by Kendall Oberto

This recipe originated on the daytime TV show, The Chew, and was recommended to me by my brother and sister in law. Now that we are in melon season, this is a wonderful way to use this delicious melon in a slightly savory way.

Ingredients
  

  • 1 Cantaloupe or HoneyDew Melon (thinly sliced)
  • 1/4 pound Spicy Salami (julienned)
  • 1/4 cup Parmigiano Reggiano (shaved with a vegetable peeler)
  • 2 tbsp extra virgin olive oil
  • 2 cups Arugula

Instructions
 

  • Thinly slice the melon and arrange on serving plate. (A cheese slicer or peeler work well to make the thin cantaloupe slices.) Sprinkle the salami over the melon. Toss the arugula with a bit of the lime juice and olive oil and artfully arrange the arugula on top. Sprinkle top with sliced cheese. Finish by sprinkling the lime juice, olive oil and freshly cracked pepper over top.
