Chewy Oatmeal Cookies
This classic cookie recipe from Taste of Home is simple and oh so tasty. Oatmeal raisin is my husband's favorite and since he is a traditionalist, we tend to make them with just the raisins (without the pecans and chocolate chips) so that's what is pictured here.
Ingredients
- 1 cup butter, softened
- 1 cup sugar
- 1 cup brown sugar
- 2 large eggs
- 1 tbsp molasses
- 2 tsp vanilla
- 2 cups flour
- 2 cups quick-cooking oats
- 1 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 1 cup raisins
- 1 cup pecans
- 1 cup semisweet chocolate chips
Instructions
- In a large bowl, cream butter and sugars until light and fluffy. Add the eggs, molasses and vanilla; beat well.Combine the flour, oats, baking soda, cinnamon and salt; gradually add to creamed mixture and mix well. Stir in the raisins, pecans and chocolate chips. Drop by tablespoonfuls (or better yet, use a #60 scoop) 2 in. apart onto greased or parchment lined baking sheets.Bake at 350° for 9-10 minutes or until lightly browned, rotating the pans in the oven half way through the cooking time. Cool on pans for 2 minutes before removing to wire racks.HAPPY EATING!!
