Recipe of the Day (#ROTD)
Many moon’s ago one of my dearest friends, Kristen Veker, made this salad for a pool party and to say it was the hit of the party would be an understatement. My oldest daughter, in particular, decided this was her favorite salad EVER!!
The original recipe calls for Turkey however, I used grilled chicken (my Grandpa Ralphie’s Grilled Chicken https://thehouseofobrien.com/grandpa-ralphies-grilled-chicken/) My bestie also substituted Briannas Poppy Seed salad dressing https://www.briannas.com for the dressing. I’ve made the dressing from scratch and it is really good but if you are in a hurry use Briannas.
Salad:
1 pound of Rotini pasta (I use the protein infused pasta)
1 1/2 cups cooked/diced turkey or Grandpa Ralphie’s Grilled Chicken
1 cup dried cherries
1 medium onion diced
4 stalks of celery diced
1 cup sliced toasted almonds
Poppy Seed Dressing:
1/4 cup of powdered sugar
2T of Champagne vinegar
2 cups real mayo
2T of water
2 t of salt
1/2 t of pepper
1T of poppy seeds
I like to add everything together especially the pasta and chicken when they are hot it deepens the flavors. This salad can be served at room temperature and then stored in the refrigerator for 4 days.
