Cinnamon Friendship Bread by Cindy Pascale

At the risk of aging myself, almost three decades ago, someone gave me a starter kit for amazing cinnamon bread. Ever since, this has been a favorite in my family. I make it for most holidays and give a starter kit to my family members. Everyone goes home knowing that in 10 days, they will have fresh cinnamon bread and starter kits to give to their family and friends!
There are directions to give to someone with a starter kit and directions if you want to make the bread but don’t have a starter kit. Please note that you will add flour, sugar and milk at different points in the recipe. So please read the instructions rather than simply looking at the ingredient list.

Ingredients
  

  • 1 1/2 cup milk-you can use whole milk or 2% milk-avoid a non-dairy milk as they have different properties than dairy milk.
  • 2 cups + 3tbsp sugar (separate)
  • 3 cups flour (separate)
  • 1 cup canola oil
  • 3 eggs
  • 2 tsp cinnamon (separated)
  • 1 1/2 tsp baking powder
  • 2 small boxes vanilla instant pudding
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 4 1 gallon ziplock bags

Instructions
 

  • If you receive a Starter Kit Instructions:
    Day 1: Congratulations! You received a Cinnamon Friendship Bread Starter Kit in a one- gallon zip-lock bag. Place on your kitchen counter and NOT in your refrigerator. Squeeze a couple of times.
    Day 2 – 5: Squeeze the bag several times each day.
    Day 6: Add 1 cup flour, 1 cup sugar, and 1 cup milk. Squeeze the bag to mix the ingredients.
    Day 7 – 9: Squeeze the bag several times each day.
    Day 10: Empty the zip-lock bag into a large non-metallic mixing bowl. Mix in 1 cup flour, 1 cup sugar and 1 cup milk. Stir until all ingredients are well combined.
    Write Day 1 = today’s date on 4 one-gallon zip-lock bags. Measure 1 cup of the batter into each of the Starter Kit bags. Give to friends and family along with the recipe.
    To the remaining batter, add canola oil, eggs, 2 cups flour, 1 teaspoon cinnamon, 1 cup sugar, baking powder, ½ cup milk, 2 small boxes of vanilla instant pudding, vanilla, salt and baking soda. Mix well.
    In small bowl, combine 1 teaspoon cinnamon, 3 tablespoons sugar. Grease the bottom and sides of 2 bread pans. Sprinkle the cinnamon/sugar mixture on the bottom and sides of the bread pans. Save some of the mixture for the tops of the bread. Pour batter into bread pans. Sprinkle remaining cinnamon/sugar mixture on top of the batter.
    Bake in pre-heated 325-degree oven for about an hour or until a toothpick comes out clean.
    If you did not receive a Starter Kit:
    If you want to start your own Cinnamon Friendship Bread without receiving a Starter Kit, you can follow these instructions to make your own Starter Kit. Allow an extra 10 days so the batter can ferment. You will also need an additional 1/3 cup sugar, flour and milk.
    Write Day 1 = Today’s Date on a one-gallon plastic zip-lock bag.
    Combine 1/3 cup of flour, sugar and milk in the bag and squeeze several times to combine the ingredients.
    Day 2 – 16, squeeze the bag several times a day.
    On day 16, go to Step 3 in the Starter Kit recipe and follow the recipe from that step. You will be on Day 16 rather than Day 6.
    Tips: Do not refrigerate the Starter Kit. You can open the Starter Kit bag to release some of the fermentation gases if the bag looks like it is going to burst.
