Crockpot BBQ Pulled Pork Tenderloin by Kendall Oberto

This recipe is inspired by a lovely luncheon hosted by a friend I met during one of my volunteer gigs. I have used her idea and recipe and a basic recipe from a site called "Bless this mess please' and made it my own. It is super easy and very scalable. I made a triple batch for my Sunday dinner crowd. Since pork tenderloins are so variable in size, I would suggest having around 1.5-2 pounds "per batch".

Ingredients
  

  • 1 1.5 to 2 pounds pork tenderlion
  • 1 tsp salt
  • 1/2 tsp smoked paprika
  • 1/2 tsp Creole seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 cup beef broth or water
  • 1 cup sweet onion, chopped
  • 1 cup of your favorite BBQ sauce, (store bought or homemade), see notes

Instructions
 

  • Remove the pork tenderloin from the package, remove the excess fat and silver skin and place it on a cutting board.
    In a small bowl combine the salt, smoked paprika, cajun seasoning, garlic powder, and onion powder. Mix to combine.
    Rub the spice mixture all over the tenderloin. You may not need all the rub but reserve extra in case you want to add more seasoning later.
    Heat a bit of oil in a large skillet and sear tenderloin for a couple minutes per side just to add a little color then place it in the bottom of the slow cooker.
    Add the water or broth to the bottom of the slow cooker (don’t pour it over the pork, though, so that you don’t wash off your spice rub). Sprinkle chopped onions on top.
    Add the lid and cook on high for 4-5 hours, or until the tenderloin is easy to shred with a fork. The more tenderloins you use, the longer the cooking time. For my triple batch (which was shy of 6 pounds), I needed about 5.5 hours. I imagine a single tenderloin would be done in 4.
    Remove the pork from the crock pot, and shred with 2 forks. Strain the juice to remove the onions and reserve juice. Return the shredded pork and onions to the slow cooker, and mix it with the BBQ sauce and stir to combine. Add as much of the cooking liquid to attain the texture you like.
    Adjust seasoning and BBQ sauce amounts to your liking serve warm.
    NOTES
    I like using a "Carolina style" BBQ sauce as it is more tangy than sweet. I found a brand by Lillie's that was delicious.
