Crunchy Chicken & Mashed Potatoes

Recipe of the Day (#ROTD)

Well folks this is one of the most beloved family recipes in my household. I serve it almost every other week and for Sunday night dinners. Its easy if you know the simple steps.

Crunchy Chicken

4 chicken breasts (you can pound down the chicken so it cooks evenly)

4 cupsCorn Flakes

4 T Olive Oil

4 T Butter

1 t Lawry’s seasoning salt

1 t Salt

1/2 t Pepper

Pre heat Oven (on convection if you have it) 350°

Rinse the chicken breast and pat dry with paper towel. Place between two pieces of wax paper and with a meat mallet pound chicken until it all is the same thickness. Place chicken on a sheet pan that is lined with foil. Drizzle olive oil over each breast and sprinkle Lawrys season salt, salt and pepper over each breast. Meanwhile, take the corn flakes and place them in a large plastic bag and close it. With a rolling pin smash the corn flakes until they are crumbs. Sprinkle lawny’s season salt into the corn flake crumbs and incorporate. Sprinkle the crumbs evenly over the chicken breasts and dollop 1/2 T of butter at a time on top of each breast. Bake for 35 mins.

The Mashed Potatoes

5lbs of Yukon gold potatoes-peel and diced

1 stick of Butter

1 cup Half & Half

Salt

Pepper

Fill a pot with COLD water. Place diced potatos into pot and turn on to medium heat and bring to a boil. Boil potatoes until tender (check with a fork for tenderness). Drain potatoes into a strainer and with a potato ricer place potatoes into ricer and rice them back into the pot you boiled the potatoes. This helps prevent the mashed potatoes from becoming gummy. Once the potatoes are all riced put in your butter and stir to melt. Add in half & half, salt and pepper to taste (you may need more butter/half & half/salt/pepper) taste the mixture and add to your liking.
