Easy Weeknight Sweet Potato Recipe

I made this delicious side dish for a meal the other day, when my daughter Lizzy and I didn't want a full dinner.
This was an easy perfect small dinner however, this sweet potato recipe can easily be a fabulous side dish as well. To save time I microwaved the sweet potato (in glass dish). I also had made the roasted broccoli in the oven the day before (great way to use leftovers).

Ingredients
  

  • 1-2 Sweet Potatoes (the amount depends on how many you are feeding, adjust accordingly)
  • 1 package feta cheese (preferably crumbed)
  • 2 tbsp good butter (you can use as much or as little butter as you want)
  • Salt
  • Pepper
  • 3 heads broccoli, broken into florets (recipe at the bottom)
  • 3 tbsp olive oil
  • 1 tbsp sugar

Instructions
 

Sweet Potato

  • Put a little over a half of a inch of water in a glass dish, place the cleaned sweet potatoes in the dish. Take a fork and poke the sweet potato several times on both sides.
    Place the sweet potatoes in the microwave for 6 minutes then turn the potato and cook the second side for 6 minutes. Repeat this 6 minute cooking process (turning) until the sweet potato feels soft to the touch. Take the glass dish out of the microwave and let the sweet potato cool down for a few minutes.
    Cut the sweet potato down the middle and with the same knife cut along cross wise then horizontal and place pats of butter in the cuts.
    Sprinkle Feta over the entire sweet potato then sprinkle your roasted Broccoli over that. Add salt and pepper to your liking.

Roasted Broccoli

  • Preheat the oven to 400°/Place a clean (non greased) cookie sheet in the oven while it heats up.
    Clean and cut 3 heads of broccoli dry slightly and place in a bowl. Drizzle broccoli with 3T of olive oil (less or more depending on your liking).
    Sprinkle salt and pepper to your liking on the broccoli then sprinkle 1 tbsp of sugar over the broccoli. With a large spoon toss to coat ALL the broccoli with the oil and the seasonings and sugar.
    Take the cookie sheet out of the oven and dump the coated broccoli on the sheet pan and place back in the oven for 10 minutes. Check the broccoli at the 10 minute mark if it is slightly soft take it out of the oven. If not leave it in the oven for a few more minutes.
