Homemade Vanilla Birthday Cake

At the HOB we have some spectacular desserts. We have some of our families favorite cakes and cookies, and now we have added a new family favorite we would like to share it with you.
The Vanilla Birthday Cake is a triumph. It's entirely from scratch but don't let that scare you it is simple to make and SO DELICIOUS. We hope your families love it as much as ours do.

Ingredients
  

CAKE

  • 2 1/2 cups flour
  • 1 2/3 cups sugar
  • 1 tbsp baking powder
  • 3/4 tsp salt
  • 12 tbsp unsalted butter, softened
  • 2 large egg whites, at room temperature
  • 3 large eggs, at room temperature
  • 1 cup whole milk, room temperature
  • 1 tbsp vanilla extract
  • 1 tbsp almond extract

Cream Cheese Frosting

  • 1 stick unsalted butter, softened
  • 8 oz cream cheese, softened (not the spreadable kind)
  • 1 tsp vanilla
  • 1/4 tsp salt
  • 4 cups powdered sugar

Instructions
 

  • Preheat the oven to 350°
    Grease your cakes pans (I used 2/ 9" cake rounds) or line your cupcake tins.
    Mix the dry ingredients in a bowl, add the softened butter and mix until it is a coarse crumble.
    Beat in the egg whites one at a time, then the whole eggs, beating for 30 seconds and scraping down the sides.
    In a separate bowl whisk together the whole milk, vanilla, and almond extract. Add this mixture to the batter 1/3 cup at a time. mix until incorporated.
    Pour mixture evenly in each cake pan or each cupcake paper.
    Bake: 30-35 minutes for cake rounds/ 18-22 minutes for the cupcakes.

Cream Cheese Frosting

  • Combine butter, cream cheese in a bowl and with a stand mixer or handheld mixer beat until lump free. Add vanilla, salt, and slowly add the powdered sugar and beat until combined.
    Spread generously on the cakes or the cupcakes.
