Liz’s Salsa

Recipe of the Day (#ROTD)

This recipe couldn’t be easier and the flavor will blow you away. Years ago a neighbor gave me this recipe but I have made a few changes.

  • 6 tomatoes chopped and drained in a strainer
  • 1 medium onion finely diced
  • 1 small can of diced green chilies
  • 1 medium jalapeño chili minced
  • 2 t of parsley
  • 1 1/4 t of salt
  • 1 t ground cumin
  • 1/4 t oregano
  • 2 medium cloves of garlic minced
  • 1 t cilantro (optional I don’t like it so I don’t use it)
  • 2 1/2 t chili powder
  • Lime juice

I salt the tomatoes once they are chopped and in the strainer. I use table salt and I use a lot of it. It pulls the moister out of the tomatoes so your salsa isn’t runny. Let the tomatoes sit in the strainer for at least a 1/2 hour. Add the rest of the ingredients and tomatoes to a bowl and stir~once combined put mixture into a pretty serving bowl and stand back it will magically disappear.
