Mom’s Special K Bars (Half Baked Harvest*)

I've never been a fan of these bars until NOW!
Admittedly I have an obsession with the "Half Baked Harvest" cookbooks right now. The recipes are to die for and they are easy. This recipe doesn't use corn syrup but rather honey and maple syrup, and in my opinion, taste far better than the original recipe. Plus, this recipe doesn't use special K at all, she subsitutes cornflakes.

Ingredients
  

  • 1 cup creamy peanut butter
  • 1/2 cup honey
  • 1/2 cup pure maple syrup
  • 1/2 cup sugar
  • 6 heaping cups corn flakes
  • 3-4 cups semisweet chocolate chips, melted

Instructions
 

  • Grease a 9×13 baking dish with butter or cooking spray
  • In a large pot, combine peanut butter, honey, maple syrup, and sugar. Cook over medium heat, stirring, until the mixture begins to bubbled the sugar dissolves. Be careful not to let the peanut butter burn.
  • Remove pot from the heat and stir in the cornflakes. Spread mixture into the baking dish.
  • I changed the chocolate topping by sprinkling the chocolate chips immediately on top of the cereal/sugar mixture and let sit for 5 minutes and let it melt slightly. Then with a knife spread the melted chocolate all over the cereal mixture.
  • Cover with plastic wrap and pop it in the fridge for at least 2 hours.
