Easy week night salad you can make year round.
Ingredients
- 2 heads Romaine lettuce, cut into bite size pieces
- 2 cups rotisserie chicken shredded
- 1/2 cup Feta cheese crumbled
- 1/2 cup garbanzo beans (chickpeas)
- 2-4 tbsp sunflower seeds
Dressing
- 1/4 cup white vinegar
- 2 tbsp balsamic vinegar
- 1/2 cup Olive Oil
- 1 tsp salt
- 1/2 tsp Pepper
- 1 1/2 tsp honey
Instructions
- In a large bowl place all the salad ingredients in and toss. HOB Secret: Take a pinch of salt and sprinkle over the lettuce and other ingredients before you put the dressing on the salad.Place the ingredients for the dressing in a mason jar, put the lid on it and shake. Note: I always shake my dressing over the sink in case the lid leaks or comes off.Once it has been emulsifed pour the dressing over the salad ingredients and toss.HAPPY EATING!!
