Summer Chickpea Salad

Easy week night salad you can make year round.

Ingredients
  

  • 2 heads Romaine lettuce, cut into bite size pieces
  • 2 cups rotisserie chicken shredded
  • 1/2 cup Feta cheese crumbled
  • 1/2 cup garbanzo beans (chickpeas)
  • 2-4 tbsp sunflower seeds

Dressing

  • 1/4 cup white vinegar
  • 2 tbsp balsamic vinegar
  • 1/2 cup Olive Oil
  • 1 tsp salt
  • 1/2 tsp Pepper
  • 1 1/2 tsp honey

Instructions
 

  • In a large bowl place all the salad ingredients in and toss.
    HOB Secret: Take a pinch of salt and sprinkle over the lettuce and other ingredients before you put the dressing on the salad.
    Place the ingredients for the dressing in a mason jar, put the lid on it and shake.
    Note: I always shake my dressing over the sink in case the lid leaks or comes off.
    Once it has been emulsifed pour the dressing over the salad ingredients and toss.
