Southwest Coleslaw by Cindy Pascale

For many cooks a visit to the local farmers’ market is a special summer treat. I am no different! My new favorite farmers’ market, is Marshall’s Farm Market in Eden Prairie, MN, located at the intersection of Eden Prairie Road and Pioneer Road (Marshalls Farm Market). We moved last fall and now, this gem is about .5 miles from my house. It is a very cute road side market rather than a traditional farmers’ market with many farmers selling their produce, meats and crafts. Almost all of the items for sale are from the Marshall Farm located in Carver, MN. At this market, you can find all the ingredients you need to make your Southwest Coleslaw! Super fresh vegetables make this coleslaw delicious!!

Ingredients
  

Dressing

  • 3/4 cup Prepared ranch dressing
  • 1 tbsp fresh lime juice
  • 1 tsp cumin

This dressing recipe makes more than you will need for the coleslaw.

Coleslaw Mix

  • 4 cups green cabbage
  • 1 cup red cabbage
  • 1 carrot shredded
  • 1/4 cup chopped red onion
  • 1-2 jalapeno peppers (depending on how much heat you and your family like) seeded and chopped
  • 1/2 cup shredded cheddar cheese
  • 2 ears roasted corn on the cob, removed from the cob
  • 2 tbsp fresh, chopped cilantro

Instructions
 

  • Mix the 3 dressing ingredients together and set aside.
    Add all of the coleslaw ingredients together in a large bowl. Add half to ¾ of the dressing and mix. If more dressing is needed to thoroughly coat the coleslaw mix, add more dressing.
    Cover and refrigerate until serving.
