
I derived this recipe from Ina Garten’s Old Fashion Banana Cake recipe. I took out the walnuts and frosting on top. I make two loaves and freeze the second one.
Ingredients
- 3 ripe bananas
- 3/4 cup granulated sugar
- 1/2 cup light brown sugar
- 1/2 cup vegetable oil
- 2 eggs
- 1/2 cup sour cream
- 1 tsp vanilla
- zest of 1 orange
- 2 cups flour
- 1 tsp baking soda
- 1 tsp salt
Instructions
- Preheat oven to 350°Grease 2 bread loaf pans.Using an electric mixer combine bananas and both sugars. While the mixer is still running add oil, eggs, sour cream, vanilla, and zest. Mix until smooth.Sift the flour, baking soda, and salt. Then add all those ingredients to the rest of the ingredients in the mixer. Pour the batter into the prepared pan and bake for 45-50 minutes, until a toothpick inserted in the center comes out clean. Cool for 15 minutes. Turn out the bread on a board and eat (warm with really good butter).Happy Eating!!
