The Jennifer Aniston Salad (with a Liz Twist)
The story on this salad is-Jennifer Aniston had this salad everyday for 10 years on the set of "Friends". I actually could eat this salad everyday as well. I made some changes to the ingredients, which is why this salad is so wonderful, you can use the base recipe and add on to it or delete whatever you want to make this salad spectacular.
Ingredients
- 3 1/2 cups quinoa/or red bulgur wheat/brown rice/
- 1/2 red onion sliced fine
- 2 cups cucumbers, sliced
- 1/2 cups parsley-chopped
- 1/2 cup mint-chopped
- 1/2 cup pistachios/smoked almonds/sliced almonds-coarsely chopped (I used smoked almonds use whatever you have)
- 2 cup chickpeas, drained
- 1 juice of 1 lemon
- 3 tbsp balsamic vinegar
- 1/4 cup olive oil
- 2 tbsp heavy cream
- 1 tsp salt
- 1 tsp pepper
- 1/2 cup feta cheese
- 1 rotisserie chicken shredded
Instructions
- Cook quinoa or whatever grain you are using according to the directions.
- Dressing: Take the balsamic vinegar and lemon juice and put them in a mason jar or a jar with a lid. Add salt and pepperAdd the olive oilAdd heavy creamAdd parsley and mintShake vigorously Note: I put the parsley and mint into the dressing as well. I do this to cut the pungent bite of these strong herbs and their flavor then macerates with the flavors of the other ingredients of the dressing.
- Place all the other ingredients into a large bowl. Pour dressing over the ingredients 3 tbsp at a time and toss then keep adding more and tossing until you have added the amount that suits you. You can always add more dressing you can't take any dressing out of the bowl once you have added it in. Happy Eating!!
