THEEE Caramel Bars

According to legend, these bars will change your life with just one bite.
All kidding aside, I'm thrilled that my friend Laurie Ransom was willing to share these coveted treats with us at the HOB. Laurie made these delicious nuggets of joy for many hockey games, parties and such. However, even with this kind of exposer the recipe was never revealed UNTIL NOW!!
Thanks "Laurs" for opening the vault and allowing the HOB the coveted recipe of THEEEE Caramel Bars.

Ingredients
  

  • 3/4 cup melted butter
  • 2/3 cup light brown sugar
  • 1 tbsp vanilla
  • 1 1/4 cup flour
  • 1 1/4 cup rolled oats or old fashion oats
  • 1 tsp baking soda
  • 1/2 tsp salt (divided)
  • 40 chewy caramel squares (such as Kraft brand)
  • 1/3 cup heavy cream
  • 1 1/2 cup semi-sweet chocolate chips

Instructions
 

  • Preheat the oven to 350°
  • Line a 8×8 inch baking pan with parchment paper and spray the parchment paper with cooking spray.
    Set aside
  • In a large microwave safe bowl, melt the butter, then whisk in the brown sugar and vanilla extract. Stir in the flour, oats, baking soda, and 1/4 tsp of salt until crumbs form.
  • Add half the mixture into the prepared 8×8 pan and bake for 10 minutes.
  • While the oat mixture bakes, add the caramels, cream and remaining 1/4 tsp of salt into a large microwave safe bowl. Stir them together and microwave for 1 minute. Stir then heat again for 1 minute. Stir and heat again for 1 minute until mixture is smooth.
  • When the crust is finished baking, evenly sprinkle chocolate chips over the top of it.
    Then pour the caramel sauce over the chocolate chips.
    Next, sprinkle the caramel layer with the remaining crust mixture and use your hands to tap it down lightly.
    Bake for another 15 minutes.
    Once the bars are finished baking transfer to wire rack and let cool completely before slicing.
