Tomato Salad with Lemon-Basil Vinaigrette by Chef Jim Keegan

Ingredients
  

Salad

  • 2 tbsp chopped fresh basil
  • 1.5 lbs Campari tomatoes washed and cut in half
  • 3 baby cucumbers washed cut into 1/4 inch slices
  • 2 tbsp fine diced red onion

Dressing

  • 1/3 cup crumbed feta cheese
  • 2 tsp dijon mustard
  • 2 tbsp white vinegar
  • 2 tbsp olive oil
  • 3 tbsp lemon juice
  • 1/2 tbsp honey
  • 1 tbsp fresh oregano
  • .125 tsp ground pepper
  • 1/4 tsp salt

Instructions
 

  • Mix halved tomatoes, sliced cucumbers and dice red onions
    together.
    Optional, sprinkle more feta on salad.
    Dressing: blend together all ingredients with an immersion or regular blender.
    Adjust flavors as you like.
