I'm not going to lie these bars are very RICH!! But they literally will make you cry they are so good. My new obsession with the Irish Chef Rachel Allen has proven, once again, to be fruitful. So far, every single recipe I've used has been a winner and easy to make. I made this recipe easier because I bought Dulce de Leche instead of reducing sweetened condensed milk (which you can do and the recipe will be wonderful). I also cut the squares of the bars small because these are so rich and dense.

Ingredients
  

  • 1 cup milk chocolate
  • 1/2 cup sugar
  • 1 cup butter, softened and diced
  • 2 1/2 cup self rising flour
  • 1 2/3 cup Dulce De Leche or boiled down Sweetened Condensed milk
Optional
  • 1/2 cup chopped finely peanuts

Method
 

  1. Preheat the oven to 350°
    Line a square 9" baking dish with parchment paper.
    In a large bowl mix together with hand mixer or a stand mixer the self-rising flour, sugar, and butter until it resembles course breadcrumbs. (NOTE: the self-rising flour has the baking powder, salt, and flour already mixed together).
    Dump the mixture out and into the prepared pan. With your fingers press the mixture evenly in the pan making sure to get the mixture all the way to the edges of the pan. Use the back of a spoon to press the mixture flat.
    Place the pan in the oven and bake for 20 minutes or until golden brown all over. Take the pan out of the oven and cool in the pan for 20-25 minutes.
    Meanwhile, over a double boiler pan on medium heat place the milk chocolate in the top pan and slowly melt all of the chocolate completely but do not boil. Once it is all melted take the top pan off the bottom pan and let the chocolate cool.
    Once cooled, spread the dulce de leche evenly over the now baked shortbread. Press the finely chopped peanuts into the dulce de leche and then on top of the peanuts pour the melted chocolate.
    Place the entire pan in the refrigerator and allow it to cool and set for about 1-2 hours. Once set, take out of the refrigerator and then lift it out of the pan and cut into small squares.
    Keep in the refrigerator.
