If you are looking for a wonderfully simple, delicious salad to compliment your Easter lunch, brunch, dinner or any other meal that you want to make special, this is the perfect salad for you. There is not much to “make”. Rather mix the ingredients and serve. Which makes bringing this salad to a gathering super easy. If you bring this salad to a gathering, complete steps 1 and 2 at home and add the balsamic reduction right before serving.

Ingredients
  

  • 5 ounces baby arugula
  • .5 ounces fresh basil-chopped
  • 1 red onion thinly sliced
  • 8 ounces fresh mozzarella marinated in basil and garlic
  • 10 ounces cherry tomatoes, medly if available
  • 2 tsp balsamic reduction-or more /less to taste

Method
 

  1. Mix together arugula and basil.
    Layer onion, mozzarella, and tomatoes.
    Drizzle the balsamic reduction over the salad before serving.
