Muffins
- 3 ripe bananas, mashed
- 3/4 cup sugar
- 1/2 cup light brown sugar, lightly packed
- 1/2 cup vegetable oil
- 2 large eggs
- 1/2 cup sour cream
- 1 tsp vanilla
- grated orange zest of 1 orange
- 2 cups flour
- 1 tsp baking soda
- 1/2 tsp kosher salt
- 1/2 cup chopped walnuts (optional)
Frosting
- 6 ounces cream cheese, room temperature
- 6 tbsp (3/4) stick of unsalted butter, room temperature
- 1 tsp vanilla
- 2 1/2 cups powdered sugar
Pre heat the oven to 350°For the Muffins:Line muffin tins with muffin cups liners.In a large bowl, mix together the mashed bananas, sugar, and brown sugar on low speed until combined. With the mixer on low, add the eggs, oil, sour cream, vanilla, and orange zest. Mix until smooth.In separate bowl sift together the flour, baking soda, and salt. With the mixer on low add the dry ingredients and mix just until combined. Stir in the walnuts if you are adding them.Pour the batter into each muffin cup about half way up the sides. Bake for 30-35 minutes (use a toothpick insert in the center of one muffin, it should come out clean. Take out of the oven.Let the muffins cool completely.For the Frosting:In a medium bowl with an electric mixer, mix together cream cheese, butter, vanilla, and powdered sugar until smooth. Frost each muffin as much as your hearts desire. HAPPY EATING!!
