Given the weather is getting warmer and it is officially spring I thought a nice light cookie would be a perfect after dinner treat. These cookies don't travel THAT well but if you line the box you give the cookies in they should be fine. They are worth it!! I found this recipe in the Pioneer Woman's first cookbook I'll link it below.
- 2 large eggs
- 1 cup canola oil
- 1/2 lbs (2 sticks) butter, softened
- 1 cup granulated sugar, plus extra for the tops of the cookies
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 4 cups plus 2 tbsp all-purpose flour
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp cream of tartar
Preheat the oven to 350°To make dough, in a large mixing bowl cream the eggs, oil, butter, both sugars, and vanilla together.Add the rest of the the ingredients and mix well. Refrigerate the dough for 1 hour. Using a cookie scoop (or ice cream scoop) scoop drops of dough onto a cookie sheet lined with parchment paper.Take a glass with a flat bottom and smear butter on the bottom of it, then dip the buttered bottom in sugar and press that bottom of the glass on top of the scoop of dough to flatten it slightly. Repeat the dipping of the glass bottom in sugar for each cookie. Bake for 9-11 minutes depending on your oven. They should barely turn brown around the edges. Allow to cool before eating.Happy Eating!!
