Popovers

Popovers are a perfect addition to any one of the soup recipes we have here on The House of O'Brien website.
These little bites of happiness are crunchy on the outside and eggy, light and moist on the inside. This recipe comes from the "Baking with Julia" cookbook however, I played around with the oven temperature and I've found my temperature settings produce a much more fluffy, inside texture, to the popover.

Equipment

  • 1 popover pan

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup whole milk, at ROOM temperture
  • 1/2 tsp salt
  • 3 large eggs, at ROOM temperature
  • 2 tbsp unsalted butter, melted
  • MORE melted butter, for greasing the popover cups

Instructions
 

  • Position a rack on the lowest rung of the oven and preheat the oven to 420°
  • Butter or spray the popover pan.
  • Place all the ingredients into a blender and whirl until smooth. You can also use a food processor or a mixing bowl and a hand held mixer.
  • Pour 1/3 of the batter into each popover cup. Place the popover pan in the oven and bake WITHOUT opening the oven door for 25 minutes. Turn the temperature down to 350° (DON'T OPEN THE DOOR) bake for another 15-20 minutes (this helps to dry out the interior of the popover. Serve immediately with butter, honey, jam or apple butter.
