In a bowl of a stand mixer, beat the egg WHITES with the whisk attachment. Whisk until very stiff peaks are formed. Fold in the cream of tartar and 1 1/2 cups of powdered sugar. Set aside.
In a separate bowl of a stand mixer beat the egg YOLKS with the whisk attachment. Whisk until very very stiff peaks are formed. Fold in the corn starch and 2 cups of powdered sugar and vanilla.
Fold the WHITES into YOLKS and store in the refrigerator.
When ready to serve first stir the mixture. Put 1/4 cup of Tom & Jerry mixture in a cup, pour about 2 tbsp of boiling water into the cup and a shot of Brandy (or more) and sprinkle with a pinch of nutmeg. Stir and enjoy!!
