Recipe of the Day (#ROTD)
Growing up going to the home of my best friend (one of 9 children) there were many favorite dinners her Mother (Punkin Hubbell) made, but this summer side dish was a stand out. Simple and more delicious than you can imagine, blue cheese cucumbers actually got better the longer they sat out at room temperature. Given that fact, the concoction from the amount of time those cucumbers sat and married with the blue cheese produced the most glorious sauce that, poured over grilled chicken or steak, rendered one speechless.
3 Cucumbers/ peeled, sliced thin
1 bottle of Marie’s Blue Cheese dressing
1/2 red onion sliced very thin
1t Garlic salt
Place all ingredients in large bowl and stir. Once stirred check for seasonings (enough salt, pepper) add more seasonings if need be.
