Buttermilk Clouds Pancakes Cabin Recipe #6

These ethereal delightful clouds of yumminess were a cabin favorite when my kids were little. When my kids were young we went to the cabin every Thursday late afternoon. My kids were in a lot of sports and activities so I had a routine I followed to get everything done and the car packed by 3:00pm Thursday afternoon.
One thing I always had ready was our menus and food for the weekend at the cabin.
Buttermilk Cloud Pancakes were always a favorite of everyone's and on my menu every weekend at the cabin. Our dearest friends (The VanSickles) had a cabin down the road from us and they loved these pancakes too!! These pancakes are fluffy, the edges are golden brown, and they are so magically delicious your whole family will fall in love with these.
The recipe is from Famous Dave's Backroads & Sidestreets cookbook. I will link the cookbook at the bottom and in our HOB store.

Ingredients
  

  • 4 cups flour
  • 1 cup packed light brown sugar
  • 2 tbsp sugar
  • 1 tbsp baking soda
  • 1 tbsp baking powder
  • 2 tsp salt
  • 4 cups buttermilk
  • 1 cup melted unsalted butter
  • 2 tsp vanilla

Instructions
 

  • Mix flour, brown sugar, sugar, baking soda, baking powder, and salt in a bowl of a kitchen aid mixer. Combine buttermilk, butter, and vanilla in a bowl and mix well.
    NOTE: I use a kitchen aid mixture fitted with paddle attachment.
    Stir in the flour mixture and let stand for 20 minutes. Pour 1/4 cup of the batter onto a hot buttered griddle for each pancake.
    NOTE: If you want to make blueberry pancakes or chocolate chip pancakes sprinkle whichever you're using on the side of the pancake that is going to get flipped.
