Chocolate White Chocolate Chunk Cookies

This is such a fabulous cookie I've been making these for years. An Ina Garten Recipe from her cookbook Barefoot Contessa Parties, this recipe is easy and oh so delicious!!

Ingredients
  

  • 1/2 lb unsalted room temperture butter
  • 1 cup light brown sugar, packed
  • 1 cup granulated sugar
  • 2 tsp pure vanilla
  • 2 large eggs, room temperture
  • 2/3 cup good unsweetened cocoa
  • 2 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 1/2 lbs good white chocolate (chips or a white chocolate bar chopped coarsly)

Instructions
 

  • Preheat oven to 350°
  • Cream the butter and the two sugar together until light and fluffy, in an electric mixture or a hand held mixer.
    Add the vanilla, then eggs, one at a time, and mix well. Add cocoa and mix again.
  • Sift together the flour, baking soda, and salt and add to the chocolate with the mixer running on low speed until just combined.
  • Fold in the white chocolate.
  • On a baking sheet lined with parchment paper, using a 1 3/4 ice cream scoop or two spoons. Bake for exactly 15 minutes (the cookies will seem underdone). Remove from the oven and let cool slightlyon the pan, then transfer to a wire rack to cool.
