Chocolate White Chocolate Chunk Cookies
This is such a fabulous cookie I've been making these for years. An Ina Garten Recipe from her cookbook Barefoot Contessa Parties, this recipe is easy and oh so delicious!!
- 1/2 lb unsalted room temperture butter
- 1 cup light brown sugar, packed
- 1 cup granulated sugar
- 2 tsp pure vanilla
- 2 large eggs, room temperture
- 2/3 cup good unsweetened cocoa
- 2 cups flour
- 1 tsp baking soda
- 1 tsp salt
- 1 1/2 lbs good white chocolate (chips or a white chocolate bar chopped coarsly)
Preheat oven to 350°
Cream the butter and the two sugar together until light and fluffy, in an electric mixture or a hand held mixer.Add the vanilla, then eggs, one at a time, and mix well. Add cocoa and mix again. Sift together the flour, baking soda, and salt and add to the chocolate with the mixer running on low speed until just combined.
Fold in the white chocolate.
On a baking sheet lined with parchment paper, using a 1 3/4 ice cream scoop or two spoons. Bake for exactly 15 minutes (the cookies will seem underdone). Remove from the oven and let cool slightlyon the pan, then transfer to a wire rack to cool.Happy Eating!!
