A Kendall Oberto Recipe
Christmas Morning Coffee Cake
This is a Christmas staple recipe from my beloved Aunt Nadine. She made it every Christmas morning as have I since she introduced it to me. Make it for your family or it also makes a great giveaway. Merry Christmas all!
Ingredients
- 3/4 cup brown sugar
- 3/4 cup white sugar
- 2 1/2 cups flour
- 1 tsp salt
- 1/2 cup melted butter
- 1/4 cup salad oil
- 1 tsp cinnamon
- 1/2 cup pecans toasted and chopped
- 1 tsp baking soda
- 1 tsp baking powder
- 1 cup buttermilk
- 1 tsp vanilla
- 1 egg
- 2/3 cup sour cream
- 1/3 cup regular milk
Instructions
- Mix first 5 ingredients in a stand mixer and take out 3/4 cup for topping. To this reserved topping, add 1 teaspoon cinnamon and 1/2 cup chopped pecans.To the remainder of the topping starter, mix in the baking powder and soda then add the egg and remaining wet ingredients.Pour batter into 2-8" buttered cake pans. Cover with nut topping and bake at 325 for 40 minutes.
