Coconut Bars

Recipe of the Day (#ROTD)

These bars are pure heaven to the coconut/chocolate lover. My Mom has been making these bars forever. I cut them into very small pieces (as I do all brownies and bars) they are rich so one or two bites of these delicious treats is enough. I store them in an air tight container in the refrigerator.

  • 1 1/2 cups of crushed graham cracker crumbs
  • 1/2 cup of melted butter
  • 1/4 cup of sugar
  • 1 14oz can of sweetened condensed milk
  • 1 1/3 cups of sweetened flaked coconut
  • 2 cups of chocolate chips

Preheat the oven to 350°

Crush the graham crackers in a plastic bag using a rolling pin to crush them. Empty the crumbs into a bowl and add sugar and melted butter and stir until combined. Dump the mixture into a glass 8×8 pan and spread to the corners evenly around the whole pan and bake for 15 minutes and take out of the oven and let cool slightly.

After 20 minutes spread the top of the crumbs evenly with the sweated condensed milk then the coconut flakes and finally the chocolate chips and put back into the oven for 15 more minutes. Take the bars out of oven and let cool. When they are cooled place in the refrigerator for at least 2 hours. After cooled in the refrigerator then cut.
