Devin’s Award Winning Chili

This chili has an incredible depth of flavor and is insanely delicious. You need to cook it in a few steps but they are all worth it. This recipe is from Devin Fredericks who is the wife of Eli Zabar, who owns Zebar's bakery on New Yorks Upper Eastside. She came up with this recipe and I'm so happy she did. I changed the recipe a tidge, I finished the cooking process in the crock-pot instead of the dutch oven.

Ingredients
  

  • 5 lbs beef brisket, cut in 1-inch cubes
  • 1/4 cup olive oil
  • 2 cup chopped yellow onions
  • 6 large garlic cloves, minced
  • 2 tbsp chili powder
  • 1 tbsp red pepper flakes, crushed
  • 1 tbsp cayenne pepper, or to taste
  • 2 tbsp ground cumin
  • 2 green peppers, seeded and diced
  • 1 bay leaf
  • 6 cup tomatoes, chopped with their liquid
  • salt and pepper
  • 1/2 cup strong coffee
  • 2 15oz cans of drained kidney beans
  • 2 tbsp chopped basil leaves

Instructions
 

Dutch Oven Instructions

  • 1. Cube the brisket, pat the cubes dry with paper towels. Heat the oil in a very large heavy-bottomed pot and quickly brown the meat, in batches, on all sides. Set aside all the cooked brisket on a platter.
    2. Sauté the onions and garlic in the same oil over medium heat until translucent, not brown, about 8-10 minutes. Add the chili powder, pepper flakes, cayenne pepper, and cumin. Sauté for 1 minute.
    3. Add the green peppers, bay leaf, tomatoes with their juice, the reserved meat and all the juices, 1 tbsp salt and 1 tsp pepper and bring to a boil. Reduce the heat, cover the pot (dutch oven) and simmer for 2 1/2 hours, stirring occasionally.
    4. Taste and season with salt to taste. Add coffee, cover the pot and simmer for 1 more hour.
    5. Add the drained Kidney beans and basil, and warm through. Transfer the chili to a large serving bowl and serve with sour cream, grated cheddar, diced tomatoes, tortilla chips, or guacamole.

Crock Pot Instructions

  • Once you get to step #3 and you have added the ingredients from this step dump all the ingredients into a the crock pot and turn it on low for 4 hours.
    Add the coffee from step #4 after an 1 hour in the crock pot then continue the cooking for the next 3 hours.
