
This dessert is so pretty yet so easy. I bought meringue cookies from Trader Joe's and crunched them up instead of making my own meringue which made this dessert come together faster. You can put this dessert in any glass the simpler the better, that way you show off the Eton Mess even more.
Ingredients
Meringue
- 1 box Meringue cookies from Trader Joe's
Strawberries filling
- 1 1/2 lbs strawberries divided, cut into quarters
- 3 tbsp sugar, divided
- 1 tbsp lemon
Whipped Cream
- 1 1/2 cups heavy cream
- 1 tbsp sugar
Instructions
- Combine half of the strawberries, 1 tbsp sugar, and lemon juicier a medium bowl. Stir.Combine remaining berries and remaining 2 tbsp sugar in a medium saucepan. Using a potato masher, crush strawberries in the sauce pan. Bring to a boil over medium heat and cook, stirring frequently, until thicker, 4-5 minutes. Remove from heat and let cool. Add this mixture to the fresh strawberries mixture and stir to combine. Whipped CreamAdd all of the whipped cream to a stand mixer or a large bowl. On low start mixing the cream and add the 1 tbsp of sugar and mix until the soft peaks start to form. Assemble:Crush as many meringue cookies as you desire into a medium glass. Layer on a few tbsp of whipped cream, spoon over the whipped cream a few tbsp of the strawberry mixture. Repeat until the glass is full.HAPPY EATING!!
