These cherished cookies were creations of Grandma Dorothy, my dear friend Sara's Mother. Sara had a cabin a few doors down from my cabin and her Mother would bring these cookies to the cabin on most occasions, not just Christmas. Everyone LOVED these cookies and I have the recipe to share with you!! Thank you Grandma Dorothy (I call her DOT).
Ingredients
- 1 cup butter, softened
- 1 cup sugar
- 1/2 cup brown sugar
- 2 tbsp water
- 1 tsp vanilla
- 2 eggs
- 3 cups flour
- 1 tsp baking soda
- 1/2 tsp salt
- 24 Andes Mints
Instructions
- Preheat the oven to 375°Cream butter and sugars together until smooth.Add eggs, one at a time then water and vanilla.Add flour, baking soda and salt.Mix until just blended.Refrigerate dough at least 2 hours or overnight.Meanwhile, unwrap the mints and cut them in half.Take the dough out of the refrigerator and take about tbsp at a time and enclose one cut mint into the dough ball. Place dough on a greased baking sheet about 2 inches apart. Bake for about 10-12 minutes.HAPPY EATING!!
