Grandma Dorothy’s Mint Surprise Cookies

These cherished cookies were creations of Grandma Dorothy, my dear friend Sara's Mother. Sara had a cabin a few doors down from my cabin and her Mother would bring these cookies to the cabin on most occasions, not just Christmas. Everyone LOVED these cookies and I have the recipe to share with you!! Thank you Grandma Dorothy (I call her DOT).

Ingredients
  

  • 1 cup butter, softened
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 2 tbsp water
  • 1 tsp vanilla
  • 2 eggs
  • 3 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 24 Andes Mints

Instructions
 

  • Preheat the oven to 375°
    Cream butter and sugars together until smooth.
    Add eggs, one at a time then water and vanilla.
    Add flour, baking soda and salt.
    Mix until just blended.
    Refrigerate dough at least 2 hours or overnight.
    Meanwhile, unwrap the mints and cut them in half.
    Take the dough out of the refrigerator and take about tbsp at a time and enclose one cut mint into the dough ball.
    Place dough on a greased baking sheet about 2 inches apart.
    Bake for about 10-12 minutes.
