
A Cindy Pascale originalThis is the perfect summer meal to make from your fresh from the garden or favorite farmers’ market tomatoes and basil. Super fresh ingredients are the key to delicious, light summer meal.
Ingredients
- 1 large heirloom tomato or other fresh tomato
- 1 bunch fresh basil roughly cut
- Fresh Mozzarella cheese, sliced into 1/4 pieces-I used pre sliced mozzarella cheese
- 1/4 cup olive oil
- 4 tsp balsamic vinegar-or more to taste
- Bread-I used sourdough, you can use any high quality bread you like
- Butter
- salt
- pepper
Instructions
- Slice the tomato in about 1/8” slices and set on a paper towel to drain excess moisture from the tomato so the sandwich does not get soggy.In small bowl, mix oil and balsamic vinegar together. Using a pastry brush, brush the mixture onto one side of both slices of bread.Butter the other sides of the bread and place one slice in the frying pan. Turn heat to medium.Layer cheese, tomato, and basil. Sprinkle salt and pepper and add the other slice of bread, butter side out, to top the sandwich. Cover.Grill for about 3-4 minutes and flip and cook for another 3-4 minutes.Serve warm and enjoy!HAPPY EATING!!
